2 tablespoons salted butter

1 onion (diced)

1 1/3 cup orzo

2 garlic cloves (minced)

3 cups chicken broth

½ cup parmesan cheese

¼ cup heavy cream

1 tsp. lemon zest

Fresh juice from 2 lemons

2-3 tablespoons fresh basil

Salt and pepper to taste

Step 1 - In a saucepan, melt the butter over medium-high heat

Step 2 - Add onion and cook for 5 minutes until onion is tender

Step 3 - Add orzo and toast for 2 minutes

Step 4 - Add garlic and chicken broth. Stir, reduce heat to low and cover.

Step 5 - Cook for 8-10 minutes or until orzo is tender and most chicken broth has been absorbed

Step 6 - Remove from heat

Step 7 - Add parmesan cheese and stir until melted

Step 8 - Stir in heavy cream, lemon zest, lemon juice and basil

Step 9 - Stir until combined. Add salt and pepper to taste

Step 10 - Serve with your choice of protein (chicken, steak, seafood)
