Darsh's Baked Tofu with Cashews

Ingredients:
  • Oil
  • 500G Extra Firm Tofu
  • 4-5 Garlic Cloves
  • ¼ Cup Sweet Red Chili Sauce
  • ¼ Cup Hoisin Sauce
  • 2-3 Tablespoons sodium reduced Soy Sauce
  • 2 Tbsp Brown Sugar (or honey as a substitute) Sriracha hot sauce to taste
  • 3/4 Cup cashews
Instructions:

  1. Cut tofu into bite size squares and put in bowl
  2. Press garlic cloves and set aside
  3. Add oil to wok over medium to high heat
  4. Cook tofu for 8-10 minutes until slightly crispy
  5. While tofu is cooking mix together sweet red chili sauce, hoisin sauce, soya sauce, brown sugar and hot sauce in a bowl
  6. Add garlic and cook 2-3 minutes
  7. Add bowl of mixed sauce to tofu and garlic
  8. Cook for 5-7 minutes until sauce starts to caramelize on tofu
  9. Add cashews and mix
  10. Serve immediately over a bed of rice with a side salad
